Back in 2015 I was asked to attend the first every Staffordshire Day at an event at the Wedgwood Museum. In the weeks running up to the event I was asked to come up with a taste of Staffordshire and on the day before whilst finishing the prep for the other breads I decided to also shape this in our county emblem and the Staffordshire Knot was born – yes I know the emblem is a Stafford Knot but I like the way my bread name rolls of the tongue.

During these weeks much tweeting took place about what the bread would contain and on 1 May 2015 all was revealed; Yeast Extract (Marmite to be exact). For those who don’t know yeast extract is a by-product of the brewing industry of which Burton Upon Trent in Staffordshire has a long tradition with the brewing industry and Marmite factory – we love driving past this factory when we go to Burton.

mmm but I hate Marmite I hear you saying – well on blind tastings the amount of Marmite haters who love the bread is amazing and indeed these are the ones who have little tantrums if I run out at events.
